How to think about portions
Lechon is rich, and there's almost always rice and side dishes on the table, so you don't need a kilo per head. If lechon is the main centrepiece, size up; if it's one of several mains, you can size down. When in doubt, round up — cold lechon reheats and the crackling can be crisped again.

How big is a Boarcher lechon?
